Aogami #1 is a type of high-carbon steel traditionally produced in Japan. Known as Aogami (Blue Steel), it is renowned for its high carbon content and is particularly preferred for its ability to maintain blade sharpness for extended periods. Thanks to the chromium and vanadium additives in the steel, Aogami #1 offers high hardness (approximately 64-65 HRC) and excellent sharpness. This type of steel enhances the durability of knives while providing superior sharpness compared to other steels.
