Shirogami #3 (White Steel #3) Knives


Shirogami #3, also known as White #3 (White Paper Steel #3), is a high-purity carbon steel manufactured by Hitachi Metals in Japan. It has the lowest carbon content in the Shirogami series, resulting in easier sharpening, greater flexibility, and crack resistance. With a hardness of approximately 60–62 HRC, it is ideal for everyday kitchen use.

White #3 possesses the characteristic sharpness of carbon steels but is not completely stainless. Therefore, it should be dried regularly and handled carefully in humid environments. Its lower brittleness compared to Shirogami #1 and #2 makes it an excellent option for both professional chefs and beginners in carbon steel.

Chemical Composition:

Carbon (C) 0.80–0.90%, Manganese (Mn) 0.20–0.30%, Phosphorus (P) and Sulfur (S) (in very low proportions). It does not contain stainless elements such as chromium, molybdenum or vanadium.
