Isamitsu
Shirogami #1 is a type of high-carbon steel traditionally produced in Japan. Also known as pure white steel, it contains a small amount of alloy. The high carbon content (approximately 1.25% - 1.35%) ensures the blades are very sharp, but the risk of rusting is quite high. Shirogami #1 is used in traditional Japanese knives and is usually handcrafted.
