Aogami #2 (Blue Steel #2) Knives


Aogami #2 is a lower carbon version of Aogami #1. While slightly less hard (approximately 61-62 HRC), Aogami #2 provides a good balance between sharpness and durability. Aogami #2 is somewhat more durable in use, which is why it is commonly preferred among chefs. The tungsten and vanadium content in the steel enhances sharpness while ensuring the blades last longer.

Chemical Composition: C 1.05 - 1.15%, Cr 0.20 - 0.50%, V 0.20%
