Zakuri
Aogami Super is a special type of steel produced by Hitachi Metals in Japan, ranking at the top of the high-performance carbon steel range. This steel is the most advanced version of the Blue Paper Steel (Aogami) series and offers an exceptionally sharp, hard, and durable structure thanks to its extra carbon and tungsten content. With a hardness ranging from 64–67 HRC, it provides outstanding cutting performance. This high hardness allows the blade to function for extended periods without needing sharpening.
However, Aogami Super is not stainless; therefore, it should be dried regularly and handled carefully in humid environments. In return, its sharpness and refined Japanese craftsmanship make it one of the most sought-after carbon steels in both professional kitchens and among users who value sharpness.
Chemical Composition:
Carbon (C) 1.40–1.50%, Chromium (Cr) 0.30%, Tungsten (W) 2.00%, Vanadium (V) 0.50%, Phosphorus (P) and Sulfur (S) (in very low proportions)
